We are West Virginia natives and U.S. Air Force Persian Gulf War veterans who found beekeeping as a way to slow down, reconnect with the land, and build something meaningful with our hands. What started as a curiosity quickly became a passion—learning the rhythm of the hive, the discipline it requires, and the reward of producing something real and unfiltered. Flying B Apiaries was born from that mindset: service, stewardship, and a commitment to doing things the right way. Every jar of honey reflects that—raw, honest, and rooted in the hills of West Virginia.

Where the Flying B Gets Its Wings

Flying B Apiaries wasn't just a name we liked — it was a tribute. We chose it to honor our family's deep connection to the U.S. Air Force. The "Flying B" is a nod to the legendary "Flying" bombers — from the iconic B-17 Flying Fortress to the modern B-1s and B-2s — that have defined American air power for generations.

Just as those crews worked with precision and collective purpose, we view our colonies as miniature squadrons, each bee playing a vital role in the mission of the hive.

Everything You Wanted to Know About Raw Honey.

Most commercial honey is heated to high temperatures and ultra-filtered to make it clear and slow crystallization. This process destroys natural enzymes, removes beneficial pollen, and strips out the flavors that make each harvest unique. Raw honey is never heated above hive temperature (~95°F) and is only coarse-strained to remove wax and debris — everything else stays exactly as the bees made it.

Not at all. Crystallization is a sign of real, raw honey — it's a natural process caused by the glucose in honey forming crystals over time. Processed honey has been treated specifically to prevent this, which is one of the reasons it looks different. To reliquefy, simply place the jar in warm (not boiling) water for a few minutes. Never microwave it — that destroys the enzymes that make raw honey special.

Store honey at room temperature, away from direct sunlight. A pantry or cabinet works perfectly. Avoid refrigerating it — cold temperatures accelerate crystallization. Keep the lid tightly closed to prevent honey from absorbing moisture, which can cause fermentation over time.

Pure honey has an indefinite shelf life when stored properly. Archaeologists have found 3,000-year-old honey in Egyptian tombs that was still edible. The natural properties of honey — low moisture, low pH, and hydrogen peroxide content — make it naturally antimicrobial. The "best by" date on our jars is about peak flavor, not safety.

Most grocery store honey is a blended, ultra-processed product — often sourced from multiple countries, heat-treated, and filtered until it tastes the same year after year. Flying B honey comes from a single beeyard in Salem, West Virginia. Each batch reflects the specific wildflowers blooming that season, which means every harvest has its own character. We don't blend it away — we label it by origin hive and harvest date so you know exactly where it came from.
